South Korean Province Unveils Innovative Vitamin C-Packed Strawberry Shake to Boost Health and Local Agriculture

In a move poised to invigorate both consumer health and the regional agricultural economy, the Chungcheongnam-do Agricultural Research and Extension Services (AREC) has announced the development of a novel and convenient health beverage: a vitamin C-rich strawberry shake. This innovative product leverages locally grown strawberries, processed into a shelf-stable powder using a specialized hot air-drying technique, and combined with nutritious ingredients such as oat flour, vegetable powder, and yogurt powder.

The AREC’s breakthrough addresses the growing consumer demand for convenient and health-conscious food options while simultaneously seeking to enhance the value and consumption of Chungcheongnam-do’s prized strawberry harvests. The newly developed strawberry shake offers a simple yet effective way for individuals to meet their daily nutritional needs, with a single serving providing the full recommended daily allowance (RDA) of Vitamin C for adults, which stands at 100 milligrams according to established nutritional guidelines.

Central to the innovation is the meticulous preservation of the strawberries’ inherent Vitamin C content. Recognizing the heat-sensitive nature of this crucial nutrient, the AREC researchers implemented a low-temperature hot air-drying process, carefully maintaining a temperature of 50℃ throughout the dehydration phase. This controlled drying environment significantly minimizes the degradation of Vitamin C, ensuring that the final powdered product retains a substantial portion of the fruit’s original nutritional benefits.

The resulting strawberry powder forms the base of the convenient shake mix. By blending it with oat flour, known for its fiber and sustained energy release; vegetable powder, contributing additional vitamins and minerals; and yogurt powder, offering probiotics and a creamy texture, the AREC has formulated a well-rounded and palatable health drink. Consumers can effortlessly prepare the shake by simply mixing a single pack of the powder with their choice of milk or soy milk, making it an ideal option for busy lifestyles.

The AREC is actively pursuing the commercialization of this promising product through a strategic technology transfer agreement with a food processing company located in Nonsan, a city within Chungcheongnam-do. This partnership is anticipated to expedite the product's entry into the market, making it accessible to a wider consumer base. The successful commercialization of the strawberry shake is projected to have a significant positive impact on the local economy by creating new avenues for strawberry utilization and fostering increased demand for regional agricultural produce.

Cho Yoon-jung, a dedicated researcher within the Agri-Food Resources Team at the Chungcheongnam-do AREC, expressed her enthusiasm for the project's potential. "Our aim was to harness the nutritional richness of Chungcheongnam-do’s renowned strawberries and transform them into an easily consumable product that supports everyday health," she stated. "This strawberry shake embodies our commitment to elevating the value of local agricultural resources and stimulating their consumption. We are eager to witness its positive impact on both public health and the livelihoods of our regional farmers."

This development underscores the pivotal role of agricultural research institutions in driving innovation within the food industry and bridging the gap between agricultural production and consumer needs. By focusing on value-added processing techniques and the creation of convenient, health-focused products, the Chungcheongnam-do AREC is setting a precedent for how regional agricultural strengths can be leveraged to foster economic growth and improve public well-being. The forthcoming launch of the Vitamin C-rich strawberry shake is eagerly anticipated by health-conscious consumers and local agricultural stakeholders alike, heralding a potentially fruitful synergy between agriculture and nutrition in South Korea.
