Culinary Fusion: Filipino Chefs Reframe Local Heritage Cuisine Using U.S. Blueberries

MANILA — Long considered a luxury item strictly reserved for breakfast smoothies, sweet crepes, and bakery muffins, the humble blueberry is breaking traditional culinary boundaries in the Philippines. In a showcase of culinary innovation, leading Filipino chefs recently demonstrated how fresh, frozen, and dried U.S. blueberries can seamlessly elevate classic savory Pinoy dishes while honoring local heritage.

The live cook-off exhibition, hosted at Enderun Extension in Pasig City, marked a special culinary celebration for the 80th anniversary of U.S.-Philippine diplomatic relations. Throughout the event, local culinary masters transformed everyday comfort food into sophisticated, global-grade creations.

Leading the showcase was Café Fleur owner Chef Sau del Rosario, who incorporated U.S. blueberries into iconic Kapampangan dishes. Del Rosario re-imagined traditional tamales by replacing typical citrus notes with a vibrant blueberry salsa. For his main feature, a classic baked boneless chicken galantina, he substituted conventional raisins with fresh blueberries both inside the savory meat stuffing and within the rich accompanying sauce. He further balanced the rich, fatty crunch of sisig fritters with a sharp berry salsa, concluding his menu with a modernized blueberry tibok-tibok coconut pudding.

Other participating chefs displayed equal creativity:

Chef Sonny Mariano (The Matcha Tokyo) presented duck with blueberry hoisin jelly, a blueberry bisteak tart, and bibingka cannoli filled with salted egg custard and berry compote.
Chef Ivory Yat Vaksman (Chef Ivory Catering) served wagyu skirt steak paired with a blueberry red wine reduction alongside savory tartlets.
Chef Wado Siman (Wadoughs Cafe) crafted a blueberry and brie grilled cheese, berry-infused stuffed cookies, and a balsamic-blueberry malsigado served over truffle couscous.
According to U.S. Embassy Agricultural Counselor Mike Ward, this shift aligns with growing health trends among younger, social media-savvy Filipino consumers who appreciate the fruit's high antioxidant, fiber, and Vitamin C content.

With U.S. agricultural exports to the Philippines topping $3.5 billion in 2025—including $390,000 in blueberry exports alone—this culinary cross-pollination highlights a thriving trade relationship that continues to enrich the local dining landscape.
